Paprika watermelon gazpacho with cherry tomatoes, chili and avocado. A refreshing snack for the hot summer days.
Ingredients
- 1 kg cold watermelon
- 1 cold red paprika, chopped
- 200 g cold cherry tomatoes
- 1 avocado, chopped
- 1 red onion, finely chopped
- 1 clove garlic, finely chopped
- 3 tablespoons lemon juice
- 3 tablespoons chili oil
- salt and black pepper
- cherry tomatoes, red chili and mint to garnish
Instructions
Peel the watermelon, and cut into small pieces.
Put all the ingredients for the gazpacho in a food processor and blend. Add salt and pepper.
Garnish with cherry tomatoes, mint and chili. Enjoy!
