Watermelon gazpacho

Paprika watermelon gazpacho with cherry tomatoes, chili and avocado. A refreshing snack for the hot summer days. 

Ingredients

  • 1 kg cold watermelon
  • 1 cold red paprika, chopped
  • 200 g cold cherry tomatoes
  • 1 avocado, chopped
  • 1 red onion, finely chopped
  • 1 clove garlic, finely chopped
  • 3 tablespoons lemon juice
  • 3 tablespoons chili oil
  • salt and black pepper
  • cherry tomatoes, red chili and mint to garnish

Instructions

Peel the watermelon, and cut into small pieces.
Put all the ingredients for the gazpacho in a food processor  and blend. Add salt and pepper.
Garnish with cherry tomatoes, mint and chili. Enjoy!
