Roasted Eggplant Salad with Feta Dressing
Rebecca: ‘Oh my goodness, y’all. Go make this salad right now! Make it with chicken. Make it with burgers. Bring it to the picnics and potlucks. It’s so freaking good! Summer side dish perfection. So easy. Tastes like something you’d get in a nice restaurant. It’s also super low maintenance. I made it for dinner and it was ready about 40 minutes before the main dish. It was fine to just sit out. Leftovers the next day were still just as delicious. Perfect salad.’

Rebecca: ‘I’ve made lots of these saucy chicken skillet recipes but this one stood out from the rest! It was so flavorful and paired perfectly with some fusilli pasta to take advantage of all that delicious sauce. The only change I made is I used Rao’s marinara sauce instead of pureed tomatoes because that’s what I had opened in my fridge. It worked great! I can see why this is a cooking club recipe because it is scrumptious. Will make again.’

Cajun Garlic Steak Bites and Potatoes
Rebecca: ‘I love this recipe! It will likely become a regular in my rotation, especially as it’s great for using up steak cuts that are good, but maybe not great for searing up whole. This meal was hearty, flavorful, comforting, and rather easy as all of Anna’s recipes are. As another reviewer pointed out, the prep work did take me a little longer than 10 minutes…but I’m also just a slow prepper so I always expect it will be more time than listed. The addition of the delicious creamy cajun sauce on top really makes the dish!’

Easy Balsamic Chicken
Kerry: ‘Delicious and easy enough for a weeknight. I loved this dish. Deep flavours for not too much effort. I had everything on hand except the cream. I opted for single cream but please don’t skip it, I really elevates the sauce. I took liberty of adding some jarred roasted peppers and served it over mashed potatoes with some green peas on the side. A winner, will make again.’
