Roasted Eggplant Salad with Feta Dressing
Rebecca: ‘Oh my goodness, y’all. Go make this salad right now! Make it with chicken. Make it with burgers. Bring it to the picnics and potlucks. It’s so freaking good! Summer side dish perfection. So easy. Tastes like something you’d get in a nice restaurant. It’s also super low maintenance. I made it for dinner and it was ready about 40 minutes before the main dish. It was fine to just sit out. Leftovers the next day were still just as delicious. Perfect salad.’
Cabbage Roll Meatballs
Nora: ‘Easy to make, great flavor. A nice take on stuffed cabbage, will definitely make again.’
Spicy Coconut Chicken Curry with Shiitakes
Harold: ‘I made this last night and it is delicious! I used the Yellow Curry Paste since that was what I hand on hand. It worked amazing!’
Rice with Shrimp Chorizo and Corn
Betsy: ‘ Really tasty. Doubled the chorizo and rice. Used frozen corn. Tasty.’
Chicken with Spicy Tomato Sauce
Rebecca: ‘I’ve made lots of these saucy chicken skillet recipes but this one stood out from the rest! It was so flavorful and paired perfectly with some fusilli pasta to take advantage of all that delicious sauce. The only change I made is I used Rao’s marinara sauce instead of pureed tomatoes because that’s what I had opened in my fridge. It worked great! I can see why this is a cooking club recipe because it is scrumptious. Will make again.’
Cowboy Butter Chicken
Jeanmarie: ‘Just a perfect blend of umami flavors and we had it for a dinner party meal and everyone raved. It is sometimes hard to make chicken interesting but this did the trick.’
Cajun Garlic Steak Bites and Potatoes
Rebecca: ‘I love this recipe! It will likely become a regular in my rotation, especially as it’s great for using up steak cuts that are good, but maybe not great for searing up whole. This meal was hearty, flavorful, comforting, and rather easy as all of Anna’s recipes are. As another reviewer pointed out, the prep work did take me a little longer than 10 minutes…but I’m also just a slow prepper so I always expect it will be more time than listed. The addition of the delicious creamy cajun sauce on top really makes the dish!’
One-Pot Rice with Ground Beef
Staci: ‘Delicious! Perfection, so flavorful and easy!’
Easy Balsamic Chicken
Kerry: ‘Delicious and easy enough for a weeknight. I loved this dish. Deep flavours for not too much effort. I had everything on hand except the cream. I opted for single cream but please don’t skip it, I really elevates the sauce. I took liberty of adding some jarred roasted peppers and served it over mashed potatoes with some green peas on the side. A winner, will make again.’
Braised Chicken with Red Onions
Eliza: ‘Delicious! Loved this! The chicken turned out so juicy. My onions were probably More on the large side so I probably should’ve only used 3-4, but nothing wrong with extra onions. Will make this again!’
Miso Roasted Broccoli Cheddar Soup
Jeanmarie: ‘Soup and A Secret Recipe for Roasting Veg. We eat a lot of roasted vegetables so I think I’m going to use the miso “sauce” from now on. This soup was just the perfect meal for rainy day schedule. Very umami.’
Jake: ‘Great flavor. I’ve made this as written a couple times. It’s a wonderful combination of flavors.’
Victoria: ‘I make this weekly, with leftovers for work lunches. It is delicious! Thanks for your recipes…you are an amazing chef and I make so many of your recipes! Love them all.’
Jake: ‘Fantastic. I made this last night and it was great. The only thing I’m doing differently next time is making a bigger batch. Thanks!’
Hamburger Steak with Creamy Mushroom Gravy
Jacquelynn: ‘Filling cold weather supper! Love this recipe! An easy, creamy dish to make and serve with potatoes or rice.’
Mikhaila: ‘YUMMY! I loved this alternative to a burger. Anything with creamy mushroom sauce is a success in my book. Thank you!’
Roasted Butternut Squash Harissa Soup
Mel: ‘Simple, delicious! It was a hit!’
Tomato Poached Cod with Pesto
Sadie: ‘Delicious. This is simple to make and so delicious. I’ve made it several times!’
Doug: ‘Love it. Super easy. Delicious!’
