Pancakes with blueberries

The perfect pancakes with fromage blanc, mascarpone and blueberries, this combo is insanely delicious! I love it, I could eat them for breakfast, lunch and dinner:)

Ingredients

pancakes

  • 500 ml milk
  • 200 g all-purpose flour
  • 2 farmers eggs
  • 2 teaspoons vanilla sugar
  • vegetable oil

cheese blueberry filling

  • 2 tablespoons mascarpone
  • 2 tablespoons fromage blanc
  • 6 tablespoons blueberries
  • a few drops of lemon juice
  • 4 tablespoons sugar

decoration

  • fresh blueberries
  • mint
  • icing sugar

Instructions

Combine all te ingredients for the pancakes. Fry the pancakes on both sides in a hot pan with a minimum amount of oil.
Put the mascarpone, fromage blanc, blueberries and sugar in a foodprocessor and blend.

Spread the blueberry mixture on the pancakes and serve garnished with blueberries, mint and powder sugar. Enjoy!
