Ingredients for kielbasa and potato skillet

  • Kielbasa: This delicious Polish sausage adds a garlicky flavor that elevates the dish. If unavailable, you can substitute with Andouille, bratwurst or Spanish chorizo.
  • Potatoes: Opt for either starchy or waxy varieties, as they maintain a firm, smooth texture when cooked and hold their shape well.
  • Onions: Adding a savory-sweet taste, onions contribute layers of flavor and complexity to this skillet meal.
  • Garlic Cloves: These add delicious, effortless flavor.
  • Bell Peppers: The colors of bell peppers enhance the visual appeal of the dish while contributing sweet and earthy flavors. I like to use a combination of red and green, but feel free to experiment with your favorites.
  • Seasoning: A flavorful blend of sweet paprika, dried oregano, dried thyme, ground cumin, salt, black pepper and a touch of chili flakes.
  • Chicken Broth: Provides the liquid needed to cook the potatoes and create a flavorful pan sauce. You can also use vegetable broth.
  • Chives: Adds a fresh touch. Alternatively, scallions or parsley can be used.

Looks Good! Could it be cooked in an Instant Pot? If so, how?

    1. Thanks, Dotty! I’m SO glad you like it. I haven’t tried it yet in an Instant Pot, but you certainly can!

      Here’s how you do it:
Turn the Instant Pot on sauté and add butter. Add kielbasa and sauté for 3 minutes.
Then, add bell peppers, followed by garlic and onion. Sauté for 5 minutes.
Turn off the Instant Pot and add in potatoes, salt, pepper, paprika, oregano, thyme, chili flakes, and cumin. Add broth, then stir until everything is mixed together thoroughly.
Place the lid on the Instant Pot until it locks, making sure the pressure valve is set to “sealing.”
Press the manual button and set the time to 12 minutes.

Please let me know how it turned out for you! Happy cooking!

I wonder how scrambled eggs would go in this as an added enhancement?

    1. Absolutely, scrambled eggs would be a great addition to this dish! You could also try adding a sliced omelet or a fried egg—both would work wonderfully. I think it’s a delicious idea!
