Kielbasa Potato Skillet
Ingredients
- 1 tbsp unsalted butter
- 1.3 pounds kielbasa sliced
- 2 bell peppers red and green, deseeded and sliced
- 2 onions thinly sliced
- 4 garlic cloves minced
- 2 pounds waxy potatoes peeled and chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp sweet paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- ¼ tsp chili flakes
- 1 cup low sodium chicken broth
- 2 tbsp chopped chives
Instructions
- Get your prep done before you start cooking: Slice the kielbasa sausages. Peel and cut the potatoes into bite-sized pieces. Deseed and slice the bell peppers. Mince the garlic cloves. Slice the onions into half-moons. Chop the chives.
- Heat butter over medium high in a large heavy bottomed skillet or Dutch oven. Add kielbasa and fry until golden brown for about 5 minutes. Remove from skillet.
- Add bell peppers and sauté for 3 minutes. Add onion and garlic, cook for 2 minutes. Add potatoes, then stir in salt, pepper, paprika, oregano, thyme, cumin and chili flakes. Cook for 3 minutes.
- Pour in broth, cover and simmer for 15 minutes until the potatoes are tender. Add more broth if needed.
- When ready, add kielbasa and chives. Stir to combine and fry for 3 minutes or until kielbasa is heated through. Enjoy!

Here’s how you do it:
Turn the Instant Pot on sauté and add butter. Add kielbasa and sauté for 3 minutes.
Then, add bell peppers, followed by garlic and onion. Sauté for 5 minutes.
Turn off the Instant Pot and add in potatoes, salt, pepper, paprika, oregano, thyme, chili flakes, and cumin. Add broth, then stir until everything is mixed together thoroughly.
Place the lid on the Instant Pot until it locks, making sure the pressure valve is set to “sealing.”
Press the manual button and set the time to 12 minutes.
