Eggs in tomato curry sauce

Eggs in a tomato curry sauce with lots of onion and garlic. Because of the spicy Indian seasoning this dish is full of flavors and really tasty. You can make this recipe ‘Italian style’ and use thyme or rosemary (instead of ginger, coriander and curry) and serve it with pasta. Both are a must-try:)

 

Ingredients

  • 8 hard boiled eggs
  • 2 large onions
  • 4 tomatoes
  • 2 chilli peppers
  • 4 cloves garlic
  • 3 teaspoons tomato paste
  • 4 tablespoons water
  • 2 teaspoons grated ginger
  • 1 teaspoon turmeric powder
  • 1 teaspoon curry powder
  • 1 teaspoon paprika powder
  • 1 teaspoon garam masala
  • 1 bunch cilantro
  • 2 tablespoons vegetable oil
  • salt and pepper

Instructions

Chop the onion and garlic and simmer for 5 minutes in a hot pan with oil. Add the ginger, turmeric, curry, pepper and garam masala, then cook for another 10 minutes until the onion is soft but not brown.

Cut the tomatoes in cubes and add them to the onions. Cook over medium heat for 5 minutes. Add the tomato paste, water, chopped cilantro and boiled eggs, simmer on low heat for 5 minutes. Season with salt and pepper.
Serve hot with rice or bread. Enjoy!
