But what makes this recipe stand out is the za’atar, that’s sprinkled over the eggs. It’s so simple and better than you would expect, and serves as the extra touch that makes these eggs something truly special. It’s a quick way to get a very tasty breakfast on the table in a short amount of time.

How to store roasted buns with eggs

  • Fridge: Leftovers can be refrigerated in an airtight container for up to 3 days.
  • To reheat: Allow the buns to come to room temperature. Preheat the oven to 320°F/160°C, then place the buns in the oven and roast until heated through, about 10 minutes.

Baked za’atar egg buns with spinach and feta

Delicious and hearty brunch or lunch: Just three buns loaded with creamy spinach and feta, topped with eggs and za'atar. Incredibly tasty and easy to make!

Ingredients 
 

  • 3 kaiser rolls or French buns
  • 6 eggs
  • 2 ounces spinach
  • ¼ cup heavy cream
  • 1 ounce feta - crumbled
  • 2 garlic cloves - minced
  • ½ tsp cumin
  • 1 tsp za’atar seasoning
  • salt - to taste
  • black pepper - to taste
  • 2 tbsp olive oil - + extra
  • unsalted butter
  • sour cream - for serving (optional)

Instructions 

  • Preheat the oven to 180°C/350°F.
  • Heat oil in a skillet, add garlic and cook over low heat until soft. Increase the heat and add spinach, cook for 30 seconds or just until the spinach is wilted. Stir in the cream and season with salt and pepper.
  • Cut the rolls in half. Using your finger tops, gently push the middle of each bun until there is a hole large enough to fit a cracked-egg.
  • Grease an ovenproof dish with butter and arrange the buns. Divide the spinach between the buns, crack an egg into each hole and dot feta around the eggs. Sprinkle with za’atar and cumin, season lightly with salt and pepper. Brush with extra olive oil.
  • Bake for 15-20 minutes, it depends on how you like your eggs. Serve at once, warm straight from the pan with sour cream. Enjoy!

    Oh had goat cheese and that worked… But baking at 180 degrees for 15-20 min gave me raw eggs. Have an electric oven…next time I will check some other cookbooks for baked eggs how-to in terms of time and temp.

    I absolutely loved this!
    I have to figure out the perfect egg temp and cook time though. I live i Hawaii – temps and humidity are challenging for the perfect medium egg with the white cooked through.
