This salmon salad recipe couldn’t be simpler. Just marinate the smoked salmon in olive oil, za’atar, orange juice, garlic, salt and pepper. While that’s happening, toss together some kale, chicory, and sweet blood oranges (trust me, they’re amazing with fish).

What is za’atar?

Ingredients 
 

  • 8 ounces smoked salmon - cut into strips
  • 2 romaine salad hearts - cut into thin strips
  • 2 cup kale leaves - chopped
  • 2 blood oranges - or common oranges, cut into bite-sized pieces
  • 2 tbsp sesame seeds

Za'atar dressing

  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp za'atar
  • 1 garlic clove - pressed
  • juice from ½ blood orange
  • 1 tsp honey
  • ¼ tsp salt
  • ½ tsp black pepper

Instructions 

  • Combine the ingredients for the dressing in a bowl. Add salmon and set aside.
  • Toss the kale leaves with romaine hearts and blood oranges, add salmon and the za’atar dressing. Gently toss to combine and sprinkle with sesame seeds. Eat!
