Fried pineapple

Super easy and delicious fruit dessert. Breaded and deep fried pineapple, served with vanilla ice cream, warm honey sauce and fresh thyme. 

Ingredients

  • 1 small pineapple
  • 1 cup bread crumbs
  • 1/2 cup flour
  • 5 tablespoons sugar
  • 2 teaspoons cornstarch
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon baking powder
  • pinch of saffron powder
  • pinch of salt

honey sauce

  • 6 tablespoons honey
  • 2 tablespoons butter

also

  • vanilla ice cream
  • 4 sprigs thyme
  • vegetable oil

Fried pineapple

Instructions

Peel the pineapple, cut into slices and remove the core.
Prepare the dough: mix the flour, sugar, cornstarch, baking powder, egg, milk, salt and saffron in a bowl. Stir with a fork until a dense mixture. Pour the bread crumbs on a plate.

Heat the oil in a deep frying pan over medium heat, pour enough oil, the pineapple slices should be completely submerged. Dredge the pineapple slices in batter, then in breadcrumbs. Fry in hot oil on both sides until golden brown. Remove and place on a paper towel to drain.

In a small saucepan, heat the honey and butter.
Arrange the warm fried pineapples on plates, decorate with ice cream and warm honey sauce, sprinkle with fresh thyme.
