Lamb stew with beer, fresh cranberries and pumpkin. It is a one-pot dish, hearty, yet surprisingly light with the characteristic bitter sweet taste of dark beer combined with the sour taste of cranberries. You’ll love it;)
Ingredients
- 1 kg lamb,cut in 2 cm pieces
- 400 g pumpkin, diced
- 300 g cranberries
- 1.5 cups dark beer, at room temperature
- 2 cups vegetable stock
- 2 large onions, finely sliced
- 1 clove garlic, finely chopped
- 1 tablespoon tomato paste
- 2 tablespoons brown sugar
- 2 tablespoons flour
- 2 tablespoons butter
- 1 teaspoon sweet paprika
- 4 sprigs thyme
- 2 bay leaves
- salt and black pepper
Instructions
Heat the butter in a deep pan, add the meat and fry over high heat until golden brown. Add the onion, garlic and pumpkin and fry for 5 minutes. Sprinkle with the flour, stir and pour the beer and broth. Season with salt, pepper and paprika and add the tomato paste, thyme and bay leaves. Simmer for an hour, covered, over low heat.
Then add the cranberries and sugar, simmer again for 1,5 hour. Enjoy!
