Easy Plum Cake

Ingredients 
 

  • 6 plums - cut into quarters
  • 9 ounces all-purpose flour
  • 7 ounces sugar
  • 5 ounces unsalted butter - at room temperature
  • 3.5 ounces full-fat Greek yogurt - at room temperature
  • 4 eggs - at room temperature
  • 2 tbsp vanilla sugar
  • pinch of salt
  • powdered sugar - for sprinkling

Instructions 

  • Preheat the oven to 175°C – 350°F. Grease a 10-inch (25 cm) loaf pan and set aside.
  • In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • Add half of the flour and mix briefly. Then add the remaining flour along with the vanilla sugar, salt and Greek yogurt. Mix until the batter is completely smooth.
  • Pour the batter into the prepared pan and arrange the plums on top.
  • Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely, then dust with powdered sugar before serving. Enjoy!

    1. Hi Paulina! No baking powder needed here! The eggs give the cake plenty of lift. The Greek yogurt also adds moisture and a bit of acidity, which helps the eggs do their job even better. That’s why it still turns out light and tender without it. 😊
