Ingredients  

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 8 chicken drumsticks
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 yellow onions - diced
  • 4 garlic cloves - minced
  • 1.1 pounds rhubarb - chopped
  • 1 tsp grated ginger
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp saffron
  • 1 tsp ground cumin
  • 1 bay leaf
  • 5 tbsp sugar - more to taste
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 1 chili pepper - deseeded and chopped
  • 2 tbsp chopped pistachios
  • cilantro - for serving

Instructions 

  • Preheat the oven to 350°F – 180°C.
  • Season the chicken drumsticks with salt and pepper. Heat oil and the butter over medium high in an ovenproof skillet. Sear the drumsticks for 5 minutes per side. Remove from skillet and transfer to a clean plate.
  • To the same skillet, add onions, garlic and rhubarb. Stir in ginger, turmeric, cinnamon, saffron, cumin , bay leaf and sugar. Cook for 2 minutes. Stir in tomato paste. Pour in chicken broth and simmer for 5 minutes.
  • Return chicken drumsticks to the skillet. Sprinkle with chili pepper and pistachios. Transfer to the oven and bake for 60 minutes.
  • Serve with cilantro and your favorite side. Enjoy!
