Ingredients: 1 large red onion; ¼ cup apple cider vinegar; 1 tbsp light brown sugar; 1 tsp salt; ½ cup boiling hot water; 2 garlic cloves; 3 tbsp lemon juice; 1 tsp black pepper; 1 tsp ground cumin; ½ tsp salt; 2 tbsp olive oil; 1 can (400g/15 oz) chickpeas (drained); ½ cup tahini; 1 tbsp sesame oil; 5 tbsp ice cold water; 4 slices of bread; mozzarella pearls; sun-dried tomatoes; pesto (or herb oil from sun-dried tomatoes); sesame seeds; chili flakes; freshly ground black pepper; basil leaves
