Ingredients 
 

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 salmon fillets
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 garlic cloves - minced
  • 1 shallot - diced
  • 1 cup fresh orange juice - about 3-4 oranges
  • 2 tsp cornstarch
  • 4 tbsp honey
  • 2 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • fresh rosemary - for serving
  • roughly chopped toasted hazelnuts - for serving
  • orange zest - for serving

Instructions 

  • Before you start cooking: Dice the shallot and mince the garlic.
  • Cut the oranges in half with a sharp knife. Using a hand held citrus reamer or an electric juicer, twist the flesh of the oranges on the reamer to extract the juice and pulp. Add lime juice and cornstarch, stir to combine.
  • Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  • Heat oil and butter over medium in a nonstick skillet. Add salmon and sear, 3 minutes per side. Remove from skillet and set aside.
  • Add shallot and garlic, cook until fragrant for about 1 minute. Pour in prepared orange juice and bring to a simmer. Stir in honey, soy sauce and fish sauce.
  • Add salmon back to the skillet and simmer for 3 minutes. Finish off with rosemary, freshly ground black pepper, toasted hazelnuts and orange zest. Enjoy!
