Ingredients: 4 strips thick cut salted bacon (chopped ); 1 pound mushrooms (a mix of chanterelles, shiitake, oyster, brown mushrooms,…); 1 carrot (thinly sliced ); 1 leek (white part, thinly sliced ); 1 small onion (finely chopped ); 2 garlic cloves (minced ); 2 small potatoes (chopped ); 2 tbsp salted butter; 2 tbsp chopped parsley; 3 tbsp flour; 2 tbsp low sodium soy sauce; ½ cup dry white wine (like Pinot Gris ); 1 cup whole milk; 4 cups chicken broth (or vegetable); 1 tsp black pepper (sweet paprika); 1 tsp sweet paprika; fresh thyme + oregano (for serving)
