Ingredients: 2 pounds boneless/skinless chicken thighs; 2 tbsp low sodium soy sauce; 1 tsp toasted sesame oil; 1 tbsp dried ginger; 6 garlic cloves (grated); 1 tbsp brown sugar; 1 tbsp mirin; 1 tbsp vegetable oil; 1 large green bell pepper (deseeded and chopped); 2 tbsp Gochujang paste (more or less to taste); 3 scallions (chopped, more for serving); 1 cup low sodium chicken broth; 1 cup rice (white, brown, jasmine or basmati); black pepper (for serving)
