Get your prep done before you start cooking: Chop the scallions. Grate the garlic cloves and ginger.
Prepare the sauce by combining the soy sauce with cornstarch, sugar, pepper, sesame oil and oyster sauce in jar or bowl. Whisk well to combine.
Add noodles to the pot with boiling water, cook according the package directions. Reserve ½ cup cooking water before draining.
While the noodles are cooking, heat the oil over medium high in a large skillet. Add ground beef, break up into small pieces and cook until browned and cooked through. About 5 minutes.
Add garlic and ginger, cook for 1 minute.
Reduce heat to medium. Add prepared sauce and simmer for 2 minutes. Pour in the reserved cooking water.
Stir in scallions, then toss in noodles. Stir well until noodles are fully coated.
Top with sesame seeds and chili flakes. Serve immediately. Enjoy!
