Mongolian Beef Noodles

Ingredients
 
 

Ground beef and noodles

  • 12 ounces noodles
  • 1 tbsp vegetable oil
  • 1 pound ground beef
  • 4 garlic cloves minced
  • 1 tsp grated ginger
  • 8 scallions chopped
  • sesame seeds for serving
  • chili flakes for serving

Sauce

  • cup low sodium soy sauce
  • 1 tsp cornstarch
  • cup brown sugar
  • ¼ tsp white pepper
  • 1 tbsp toasted sesame oil
  • 2 tbsp oyster sauce
  • ½ cup pasta water

Instructions
 

  • Bring a large pot with salted water to a boil.
  • Get your prep done before you start cooking: Chop the scallions. Grate the garlic cloves and ginger.
  • Prepare the sauce by combining the soy sauce with cornstarch, sugar, pepper, sesame oil and oyster sauce in jar or bowl. Whisk well to combine.
  • Add noodles to the pot with boiling water, cook according the package directions. Reserve ½ cup cooking water before draining.
  • While the noodles are cooking, heat the oil over medium high in a large skillet. Add ground beef, break up into small pieces and cook until browned and cooked through. About 5 minutes.
  • Add garlic and ginger, cook for 1 minute.
  • Reduce heat to medium. Add prepared sauce and simmer for 2 minutes. Pour in the reserved cooking water.
  • Stir in scallions, then toss in noodles. Stir well until noodles are fully coated.
  • Top with sesame seeds and chili flakes. Serve immediately. Enjoy!
