Salmon burgers with mozzarella and asparagus

Ingredients
 
 

Salmon patties

  • 10 ounces salmon fillets
  • 1 tbsp chopped chives
  • 1 tbsp chopped dill
  • ½ mozzarella ball
  • salt to taste
  • black pepper to taste
  • ½ cup breadcrumbs
  • vegetable oil for frying

Sauce

  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp pickled cucumber diced
  • 1 shallot diced
  • 1 garlic clove grated
  • 1 tbsp capers
  • 1 tsp lemon juice
  • 1 tbsp chives chopped
  • salt to taste
  • black pepper to taste

For serving

  • 2 buns
  • ½ mozzarella ball sliced
  • 3.5 ounces asparagus
  • 1 tbsp unsalted butter

Instructions
 

  • In a bowl, combine all the ingredients for the sauce.
  • Add breadcrumbs to a shallow dish, set aside. Cut the salmon and mozzarella very finely by hand (don’t pulse in a food processor, ensuring you don’t over-mix the fish). Add chives and dill, season with salt and pepper. Form two patties, press each side gently into the breadcrumbs.
  • Heat oil in a skillet, cook patties over medium heat, 5 minutes per side, flipping from time to time.
  • In the meantime, bring a pot of salted water to a boil. Add asparagus and cook for 2-3 minutes. Drain.
  • Heat butter in a pan until browned, add asparagus and cook 1 min. Season with salt and pepper.
  • Toast the buns. Spread an even layer of prepared sauce on bottom of each bun. Set a salmon patty on top, add mozzarella and asparagus. Close the buns and serve right away. Eat!
