Get ready to add a new favorite side dish to your repertoire! This salad is bursting with flavor and super easy to make, it’s the perfect accompaniment to any meal and any occasion. Made with canned corn, avocado, bell pepper, feta and a vibrant yogurt dressing.

Ingredients
 
 

  • 2 cans corn (10 oz/300 g), drained
  • 1 red bell pepper deseeded and diced
  • 1 red onion chopped
  • 4 scallions chopped
  • 1 avocado diced
  • ½ cup cilantro chopped
  • 1 garlic clove grated or pressed
  • ½ lemon juiced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp grond cumin
  • 3.5 ounces feta crumbled
  • 1 tbsp mayonnaise
  • 2 tbsp yogurt full fat

Instructions
 

  • Start with preparing your vegetables: Chop the onion, scallions and cilantro. Dice the avocado. Deseed and dice the bell pepper. Try to keep the pieces small and equal in size.
  • To a bowl, add the corn kernels, onion, avocado, bell pepper, scallions, cilantro and grated garlic. Sprinkle with lemon juice and season with salt, pepper, paprika and cumin. Add crumbled feta, mayonnaise and yogurt.
  • Toss to combine. Taste and adjust salt or pepper. Enjoy!
