Christmas Meatballs

Ingredients
 
 

Meatballs

  • 1.1 pounds ground meat like chicken, turkey, beef, lamb or pork
  • 1 egg
  • 3 tbsp breadcrumbs
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ cup grated Parmesan
  • 1 tbsp olive oil for cooking
  • 1 tbsp unsalted butter for cooking

Cranberry Sauce

  • 1 shallot finely chopped
  • 2 garlic cloves minced
  • 9 ounces fresh or frozen cranberries
  • 3 ounces brown sugar
  • 3 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup water
  • fresh rosemary for serving
  • chili flakes for serving

Instructions
 

  • To a bowl, add ground meat, egg, garlic powder, salt, pepper, breadcrumbs and Parmesan. Mix with your hands, just until combined. Roll into 2-teaspoon sized meatballs. Makes about 35 meatballs.
  • Heat oil and butter over medium in a large skillet or pan. Add meatballs and brown all over for about 2 minutes. Remove from skillet, leaving the oil in the skillet.
  • Add garlic and shallot, cook for 2 minutes until fragrant. Stir in cranberries, next add brown sugar, balsamic vinegar, salt and pepper. Pour in water, cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Taste and adjust brown sugar, if you like your sauce sweeter.
  • Remove the lid from the skillet, toss in meatballs and simmer, uncovered for 5 minutes more or until the meatballs are cooked through.
  • Top with rosemary and chili flakes. Enjoy!
