Garlic Butter Gnocchi with Sausage

Ingredients
 
 

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter divided
  • 12 ounces Italian sausage mild or spicy, casings removed and roughly chopped
  • 8 garlic cloves minced
  • ½ cup dry white wine
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • 1 cup low sodium chicken broth
  • 1 tbsp lemon juice
  • 1.1 pounds gnocchi
  • 2 tbsp freshly chopped parsley

Instructions
 

  • Get your prep done before you start cooking. Remove casings from sausages and roughly chop into small pieces. Mince the garlic cloves and chop the parsley.
  • Heat oil and 1 tablespoon butter over medium high. Add sausages, place in a single layer and sear undisturbed for 2 minutes. Then stir and cook until browned. Add garlic and cook for 1 minute.
  • Deglaze the skillet with white wine, simmer for 2 minutes while stirring and scraping up the brown bits on the bottom of your skillet with a wooden spoon.
  • Add salt, pepper and Italian seasoning. Next pour in broth and add the remaining butter and lemon juice. Stir until the butter is melted.
  • Add gnocchi, cook for 2-3 minutes or according to the package directions. Stir in parsley. Serve and enjoy!
