Tomato Miso White Bean Bake

mince the garlic

finely chop the shallot

dissolve white miso paste in hot water

add oil, garlic and shallot an ovenproof skillet, cook for 2 minutes

stir in spices

add tomato paste, stir for 1 minute

pour in vegetable broth

add spinach, stir until wilted

add white beans

add lemon juice  and miso

turn off the heat, top with mozzarella and pecorino

finish off with black pepper and red pepper flakes, transfer to the oven, bake for 10 minutes
