'Nduja Pasta


grate the Parmesan

dice the carrot

chop the onion

mince the  garlic cloves

chop the parsley

heat oil and butter  over medium,  add garlic, onion  and carrot,  cook for 3 minutes

add ground pork,  break up into pieces

cook until browned

add salt, pepper  and sage

stir in Nduja and  tomato paste

add puréed  tomatoes  and milk,  simmer for  10 minutes

meanwhile,  boil orecchiette  al dente in  salted water

when ready,  add 1/4 cup  cooking water  to the sauce

stir in Parmesan

drain the pasta

toss with parsley  and orecchiete
