Steak with  Onion-Bourbon Sauce

season steaks on  both sides with salt,  pepper and paprika

thinly slice the onions

mince the  garlic clove

heat oil and butter  over medium high,  add steaks

sear, undisturbed  3 minutes per side

reduce heat  to medium,  remove steaks  from skillet

cover with  aluminum foil

add onions  and cook  for 8 minutes

add garlic,  cook for 2 minutes

deglaze with bourbon,  cook until evaporated

add thyme and  beef broth, cook  for 3 minutes

stir in  Worcestershire sauce  and butter   

add cream,  bring to a simmer

add steaks,  simmer for 1 minute

smother the steaks  with sauce

top with  black pepper  and parsley
