Yellow Coconut Chicken Curry

season the chicken  with salt, pepper  and paprika

slice the mushrooms

mince the  garlic cloves

dice the shallot

grate the ginger  and chop the  chili pepper

heat oil and butter  over medium

add chicken

sear 5-8 minutes  per side

remove from skillet

add mushrooms, cook until they release moisture, then add oil

add garlic,  shallot, ginger and  chili pepper

stir in turmeric,  cumin, curry powder  and brown sugar

deglaze with  chicken broth, simmer for  2 minutes

pour in  coconut milk

add soy sauce,  fish sauce and lime juice

add asparagus

add chicken,  simmer for  5 minutes

meanwhile,  chop the cilantro  and scallions

top with  chopped greens
