Wild Mushroom Chowder with Bacon

chop the bacon

mince the garlic

finely chop the onion

thinly slice the leek

thinly slice the carrot

chop the potatoes

finely chop the parsley

tear up or chop the mushrooms

melt butter in a large pot

add bacon

cook until crispy

remove, leaving as much grease as possible in the pot

add half of the mushrooms, cook until they start to  release moisture

add the remaining  mushrooms, cook until they start to brown

remove from pot

add butter

add onion, garlic and leek, cook until soft

stir in flour

pour in white wine, simmer for 2 minutes

add carrot and potatoes

stir in spices

add chicken broth

bring to a boil, cover, simmer for 15 minutes

when ready, add mushrooms, simmer for 5 minutes more

stir in soy sauce & cream

add parsley

finish off with bacon, thyme and oregano

top with additional black pepper
