remove casings from sausages, cut into  smaller pieces

slice the mushrooms

finely chop the celery stalk

dice the carrot

finely chop the shallot

mince the garlic

heat oil over high, add mushrooms, cook until they release moisture

stir in butter, then garlic, shallot, celery and carrot

add chili flakes, salt, pepper and Italian seasoning

add Italian sausage, cook until it starts to brown

stir in flour

add chicken broth, heavy cream  and Parmesan, bring to a boil

add broken lasagna sheets, cook for 15 minutes

meanwhile, shred the cheddar cheese

when the noodles are cooked all dente, add cheddar

stir until dissolved, finish off with black pepper
