Tuscan Bacon Gnocchi

grate the  Parmesan cheese

mince the  garlic cloves

dice the shallot

chop the  bacon and  the sun-dried  tomatoes

cook bacon  over medium high  until crispy,  remove from skillet

reduce heat  to medium,  sauté garlic and shallot for 1 minute

stir in  Italian seasoning,  salt, pepper and  tomato paste,  cook for 1 minute

pour in  chicken broth,  bring to a boil

add spinach,  stir until wilted

pour in  cream,  bring to a boil

add gnocchi,  simmer for  2 minutes

stir in  Parmesan

stir in  sun-dried tomatoes

finish off with  bacon and  chili flakes
