Turkey Sage Stuffed Sweet potatoes

layer a baking sheet  with parchment paper, sprinkle with olive oil, paprika, salt and pepper

halve the sweet potatoes, arrange on the baking sheet,

bake for 30 minutes  at 400°F (200°C)

chop the sage

dice the shallot

mince the  garlic cloves

heat oil and butter,  add garlic and shallot, cook for 1 minute

add ground turkey, break up into pieces

add paprika, salt, pepper, nutmeg and sage, cook until  cooked through

add spinach,  cook until wilted

remove sweet potatoes from oven,  scoop out the center, leaving enough flesh around the edges

 combine scooped out flesh with turkey mixture, stuff it into the potato boats

top with cheddar, cranberries,  Parmesan,  pecans and sage

transfer to the oven, bake for 10 minutes
