Tomato Poached Cod with Pesto

finely chop the shallot

mince the garlic

heat oil and butter over medium, and cherry tomatoes

cook for 5 minutes, until they start to burst

press with a fork to release the juices

add garlic and shallot, cook for 2 minutes

add salt, pepper, paprika and thyme sprigs and  balsamic vinegar cook for 1 minute

add crushed tomatoes, bring to a boil

lay the cod fillets in the tomato sauce

season with salt  and pepper, cover, simmer for 6-8 minutes

when ready, top with pesto and chili flakes
