dice the onion

dice the  celery stalks

slice the carrots  into half-moons

chop the parsley

grate the ginger  and garlic cloves

heat oil over  medium high,  add onion, carrots  and celery stalks,  cook for 5 minutes

add garlic  and ginger,  cook for 1 minute

add  chicken thighs

pour in  chicken broth  and add turmeric

add peas,  cover and  simmer  for 15 minutes

remove chicken  from pot

shred using  2 forks

return to the pot

finish off with  black pepper  and parsley
