The Best Spicy Spaghetti Bolognese

finely dice the carrot

finely dice the celery stalk

finely chop the onion

mince the garlic

heat oil and butter over medium in a large pot

add onion, garlic, carrot and celery, cook for 5 minutes

add pancetta, cook for 3 minutes

add ground meat mixture, break up into pieces, cook until it starts to brown

add salt, pepper, sugar  and 'Nduja

stir until combined

pour in red wine, simmer for 3 minutes

stir in tomato paste

add tomato purée and bay leaves, simmer for 15 minutes

meanwhile, boil spaghetti al dente in salted water

when ready, scoop up 1/2 cup cooking water, drain the spaghetti

add milk and stir in Parmesan

toss with spaghetti
