The Best Greek Potato Salad

add unpeeled  potatoes and hot water to a large pot

add salt, boil until tender, about 15 minutes

add feta and Greek yogurt to a large bowl, mash with a fork

add mayonnaise  and mustard

add lemon zest, grated garlic and lemon juice

season with salt and pepper, stir to combine

chop the cucumbers

slice onion in  half-moons

chop the dill

chop the chives

drain the potatoes, run under cold water

cut into bite-sized pieces

to the bowl, add potatoes, onion, cucumbers, capers,  dill and chives

stir to combine
