Thai Cod Curry

pat the cod loins dry,  season both sides  with salt and pepper

grate  the garlic cloves  and ginger

chop the white parts  of the scallions and  cut the green parts  into larger pieces

heat oil and butter  over medium high,  add cod loins

sear 2 minutes  per side

remove  from skillet

add garlic, ginger  and white parts  of the scallions,  cook for 1 minute

stir in Thai  red curry paste

pour in  chicken broth,  add asparagus,  bring to a boil

add soy sauce,  kaffir leaves,  chili flakes and  coconut milk,  bring to a boil

add green parts  of the scallions  and lime juice,  simmer for  3 minutes

reduce heat  to medium low,  add cod,  simmer for  5 minutes

finish off with  chili flakes  and scallions
