Thai Chicken Meatballs in Peanut Sauce

chop the cilantro

chop the bok choy

grate garlic cloves and ginger

combine ground chicken, cornstarch, egg yolk, garlic, ginger, sambal, soy sauce and cilantro

roll into meatballs

heat oil and butter  over medium

add meatballs

brown all over, remove from skillet

add garlic and ginger, cook for 1 minute

add bok choy

stir in  Thai red curry paste and sambal

deglaze with chicken broth

add coconut milk

stir in  peanut butter

add honey,  lime juice, soy sauce  and fish sauce

add meatballs, simmer for  15 minutes

meanwhile,  bring chicken broth and coconut milk to a boil

add rice,  boil for 10 minutes, then turn the heat off, let sit, covered, for 10 minutes more

meanwhile,  chop the peanuts  and chives

top with cilantro, chives and peanuts
