Sun-Dried Tomato Rigatoni

grate the garlic

chop the sun-dried tomatoes

chop the basil leaves

cook the rigatoni

heat a skillet over low, add oil and garlic, cook for 1 minute

add tomato paste, cook for 2 minutes

add salt, pepper, paprika and thyme

add cream, stir until combined

stir in pecorino

scoop up 1/2 cup cooking water, drain rigatoni

toss rigatoni and sun-dried tomatoes with sauce

add basil and 1/4 cup cooking water

top with black pepper and red pepper flakes
