Sticky Bourbon  Chicken

cut the  chicken thighs into bite-sized  pieces

combine with  cornstarch,  water and soy sauce,  set aside

prepare the bourbon sauce

grate the ginger

mince the  garlic cloves

chop the scallions

heat your wok until smoking hot, add oil

place chicken,  in a single layer sear undisturbed  for 1 minute

then stir-fry  for 4-5 minutes

remove from  the wok

add garlic and ginger,  stir for 30 seconds

deglaze with  white wine

pour in prepared bourbon sauce, bring to a simmer

add chicken,  simmer for  1-2 minutes

stir in scallions
