chop the scallions

cut the halloumi into  bite-sized pieces

boil rice in  salted water  according  package directions

combine the honey  with sriracha,  rice vinegar and  mayonnaise

prepare 3 plates,  add flour to the 1st, beat eggs in the 2nd,  combine panko with  Cajun seasoning  in the 3rd plate

dredge each  halloumi bite in flour,  then dip in eggs,  finally toss in  panko mixture

heat oil over  medium high,  place halloumi bites  in a single layer

fry 30 seconds to  1 minute per side,  until golden brown

transfer onto a  plate layered with  paper towel
