Spicy Roasted Pepper Rigatoni with Ricotta

mince the  garlic cloves

dice the onion

boil rigatoni al dente in  salted water

heat oil  over medium

add onion and garlic, cook until fragrant

stir in vodka

add cherry tomatoes, cook until they  start to burst

press down  with a fork to release juices

add roasted peppers

stir in chili flakes,  paprika, pepper,  salt and  tomato paste

add crushed  tomatoes, simmer for  10 minutes

scoop up 1/2 cup cooking water, drain the rigatoni

stir in ricotta

toss with rigatoni

add basil  and 1/4 cup  cooking water
