Spicy Fried Rice with Shrimp


chop the bacon

chop the scallions

grate the ginger  and garlic cloves

beat the eggs  with sriracha,  salt and pepper

prepare the sauce:  combine mirin, chili oil,  sesame oil, low sodium  soy sauce, oyster sauce,  and sriracha

heat oil over  medium low, add  the beaten eggs

scramble  for 30 seconds

remove from skillet

increase the heat,  add oil and butter,  place shrimp in  a single layer

sear 1 minute  per side

remove from skillet

add bacon,  cook until crispy

stir in scallions

stir in garlic  and ginger

stir in  cooked rice

pour in the  prepared sauce

add shrimp

stir in  scrambled eggs
