season chicken fillets with salt, pepper and garlic powder
tear the shiitakes into small pieces
grate the garlic cloves and ginger
chop the cilantro
heat oil and butter over medium high, add chicken fillets
sear 5-8 minutes per side
remove from skillet
add shiitakes, cook until golden brown
stir in garlic, ginger and Thai red curry
add coconut milk, bring to a boil
add lime juice, soy sauce, cilantro and sambal oelek
