Spicy Chicken Zucchini Stir-Fry

slice chicken fillets into thin slices

chop the mushrooms

cut zucchini into thin half-moon slices

grate ginger and garlic cloves

combine chicken broth with soy sauce, oyster sauce, sesame oil, mirin and cornstarch

heat oil over high, place chicken in a single layer, sear for 1 minute

next start stirring, fry for 2 minutes, until nearly cooked

remove from wok

add oil, place zucchini in a single layer, sear for 1 minute

then start stirring, fry for 2 minutes

remove from wok

add mushrooms, stir fry until golden brown

return zucchini and chicken to wok

pour in prepared sauce

stir in Gochujang paste

add garlic and ginger, stir to combine

cook for  2-3 minutes, serve!
