Spaghetti with Clams and Pancetta

rinse the clams,  add to a bowl with salted water, set aside

mince the garlic

finely chop the onion

chop the parsley

rinse the clams one more time in salted water

cook the spaghetti  in salted water

heat oil in a skillet

add pancetta, cook until crisp

add garlic and onion, cook until fragrant

deglaze the skillet with a splash of white wine

stir in spices

pour in remaining white wine

add clams, cover and simmer for 8-10 minutes

scoop up 1/2 cup cooking water

drain the spaghetti

when ready, add butter and 1/4 cup cooking water

add zest and juice from 1/2 lemon

stir in parsley

toss with spaghetti
