Smoked Salmon and Bell Pepper Spaghetti

remove veins and seeds from the bell peppers, then cut into thin slices

cut the cherry tomatoes in half

mince the garlic

chop the parsley

heat oil over  medium high,  add bell peppers

cook until soft, about 8-10 minutes

meanwhile, boil spaghetti  al dente in  salted water

add garlic, cook until fragrant

stir in salt, pepper,  paprika, thyme  and chili flakes

add cherry tomatoes, cook for 5 minutes

pour in white wine, cook for 2 minutes

add tomato paste

add mascarpone

scoop up  cooking water, add a splash  to the sauce

stir in parsley

drain the spaghetti

toss with sauce

add smoked salmon, toss for 1 minute
