Shrimp Chorizo Polenta

mince the garlic,  chop the scallions,  slice the chorizo

grate the  Manchego cheese

heat oil over  medium high,  add chorizo

cook until crispy,  slide aside

add shrimp,  cook for 2 minutes

stir in garlic

add oregano,  cayenne pepper,  smoked paprika,  salt and pepper

add olive oil and  cherry tomatoes

press the tomatoes  down to release  their moisture

add olives, scallions,  lemon juice and butter

stir to combine,  set aside

bring chicken broth  and milk to a boil

add polenta ,  stir continuously  for 2 minutes

turn off the heat,  stir in salt pepper  and Manchego cheese

stir in butter
