Scallops in Creamy Vodka Sauce

pat the scallops dry,  season both sides with  salt and papper

mince the  garlic cloves

chop the parsley

heat oil and butter  over medium high,  add scallops

sear 3-4 minutes  per side,  turn, cook  for 1 minute

remove from skillet

reduce heat  to medium,  add butter, then garlic,  cook for 30 seconds

deglaze with vodka,  simmer for 2 minutes

add tomato paste,  cook for 1 minute

stir in oregano

pour in cream,  bring to a simmer

add scallops,  simmer for  30 seconds

finish off with  black pepper,  chili flakes  and parsley
