Sausage  Eggplant Skillet

remove casings from sausages, cut into  bite-sized pieces

cut eggplant into  bite-sized pieces

 deseed and chop  the bell pepper

mince the  garlic cloves

dice the onion

heat oil and butter  over medium,  add sausages,  brown all over

remove from skillet

add eggplant  and pepper,  sauté for 5 minutes

add garlic, onion, salt, pepper and oregano, cook for 3 minutes

stir in  tomato paste

add cherry tomatoes and chicken broth, simmer for 5 minutes

toss in basil and sausage, finish off  with chili flakes
