salmon in garlic mascarpone sauce

pat the salmon dry  with a paper towel

chop the almonds

chop the chives

mince the garlic

chop the onion

season the salmon with salt, pepper and paprika

heat oil in a skillet

add salmon

sear on both sides

remove from skillet

add shallot

cook for 2 minutes

add garlic, cook until fragrant

add sun-dried tomatoes

roasted bell peppers

season with salt & pepper

pour cream

add mascarpone

stir until dissolved

add Parmesan

nestle salmon in the sauce, simmer for 3 minutes

sprinkle with lemon juice

stir in basil leaves
