Salmon and Shrimp Alfredo

pat the salmon dry,  cut into cubes

combine salmon with  shrimp, salt, pepper  and Cajun Seasoning

quarter the tomatoes,  remove the seeds

cut into strips,  then dice

mince the  garlic cloves

dice the onion

chop the parsley

grate the Parmesan

boil spaghetti  al dente  in salted water

heat oil and butter  over high, place  salmon and shrimp  in a single layer

sear 1 minute  per side

remove from skillet

reduce heat to  medium, add onion,  garlic and tomatoes,  cook for 2 minutes

deglaze with  white wine,  simmer for  2 minutes

stir in rosemary  and tomato paste

pour in cream,  bring to a simmer

add parsley  and Parmesan

scoop up 1/2 cup  cooking water,  drain the spaghetti

toss sauce with  spaghetti,  salmon and shrimp
