Salmon all'Arrabbiata

pat the  salmon fillets dry

season both sides  with salt and  pepper

mince the garlic

dice the onion

heat oil and butter  over medium

add salmon fillets

sear 3-4 minutes per side

remove from skillet

add garlic and onion, cook until soft

stir in chili pepper, anchovy, salt, pepper,  oregano, sage, paprika  and tomato paste

deglaze with chicken broth

pour in  crushed tomatoes, simmer for  5 minutes

meanwhile, chop the parsley

add spinach, simmer for  2 minutes

stir in Parmesan

add salmon, simmer for  3 minutes

finish off with  black pepper,  red pepper flakes and parsley
