Roasted Pumpkin Soup

deseed the pumpkin,  cut into chunks

combine with  olive oil,  salt, pepper  and paprika

spread into  a single layer,  bake at 400°F/200°C  for 25 minutes

dice the onion

mince the  garlic cloves

dice the chorizo

heat oil over  medium high,  cook chorizo  until crispy,  remove from pot

add onion  and garlic,  sauté 5 minutes  over low

stir in nutmeg  and sage

add roasted  pumpkin

pour in  chicken broth,  bring to a boil,  simmer  for 5 minutes

turn off the heat,  blend until smooth

stir in cream  enjoy!
